Abstract :
    This research deals with the design, implementation and evaluation of a food chain traceability system based on blockchain technology with the aim of increasing transparency, safety and consumer trust. In this system, we will use IoT sensors to automatically record all assessments, traceability, transparency and environmental parameters. The honeycomb algorithm is used to select validation nodes and optimize data recording paths and transaction processing. The research in this paper includes technical architecture design, initial prototype development, pilot implementation on a selected product such as saffron or coffee and quantitative and qualitative evaluation of the performances as well as reducing costs and increasing user acceptance. It is expected that the proposed system in this paper will reduce the time of origin traceability, increase the accuracy of data transparency and significantly improve consumer trust.
