Abstract :
Collagenases are the most important group of in view of their wide commercial and biological applications. The emerging documents of potential applications collagenases in food and medical industry have revealed that these enzymes play important role as a main component for bioactive functional ingredients and the preparation of peptides. Due to the ability to collagen degradation by collagenases, they are critical factors that play a crucial role in the global degradation of extracellular matrix of animals. This article summarizes properties collagenases and present potential applications of collagenase in medical, food industries and importance in biotechnology.
