Abstract :
Using of kefiran as a new film-forming material was studied. In this research, the effect of plasticizersorbitol and glycerol at the ratio of 15, 20, and 25% (w/w) by the casting method addition on Edible kefiran film was investigated.Mechanical, physical, and water vapor permeability (WVP) properties were appointed as a function of plasticizer concentration.The results showed that increasing the amount of glycerol concentration led to an increase in flexibility and WVP, as expected. glycerol was found to be a more better plasticizer for kefiran films than sorbitol. In addition, compared with other polysaccharides, kefiran has several important advantages,to make them more suitable for food technology applications.
