Abstract :
Food specialists have been looking for perfect quality control methods to assure the better production with higher quality in lower cost and shorter time. Accurate and fast analysis in food process is essential to confirm the quality and also control the health risks like harmful bacteria, toxins, etc. Biosensors offer the fast, non-destructive and cheap methods in food quality control. Biosensors as a biodetection system mix the biology and electronic science. They have been improved a wide range of biological and food applications along with high speed and ease of use comparing to other traditional methods. They are really a big jump in food analytical techniques. This paper reviews the aspects of biosensor’s applications in food industry. These valuable elements are able to produce an interesting revolution in food analytical science. This review provides an overview the role of biosensors in the food quality, safety and packaging industry and also the future prospects.
