Abstract :
Listeria monocytogenes is a major food safety concern because of its ability to persist in food-processing environments, form biofilms on food-contact surfaces, and cause severe invasive disease. The limitations of conventional sanitation strategies have encouraged investigation of plant-derived antimicrobials with complementary mechanisms of action. Sumac (Rhus coriaria L.), a widely consumed spice, contains diverse bioactive compounds, including hydrolysable tannins, gallic acid derivatives, flavonoids, and other phenolic constituents with reported antioxidant and antimicrobial activities. This critical review evaluates the potential of sumac-derived compounds to control L. monocytogenes, focusing on biofilm formation, bacterial membrane integrity, stress adaptation, and virulence-associated processes. Recent literature on sumac phytochemistry and foodborne-pathogen control was critically compared with contemporary evidence concerning Listeria biofilm persistence and established food-processing interventions. A central finding is that sumac possesses a credible antimicrobial rationale, but direct evidence for its efficacy against L. monocytogenes biofilms under industrial food-processing conditions remains limited. A 2024 investigation identified 22 phenolic and flavonoid compounds in sumac extracts and demonstrated pathogen-dependent antibacterial and antibiofilm effects; however, its test organisms did not include L. monocytogenes. Consequently, results from other bacterial species cannot establish a specific anti-Listeria effect. Future investigations should integrate chemical standardization, concentration–response analysis, mature-biofilm testing, virulence-gene expression, food-matrix validation, sensory assessment, and compatibility with established sanitation procedures. Sumac is therefore best regarded as a promising candidate for developing complementary food safety interventions rather than a validated replacement for conventional disinfection.
